Mini Egg Protein Cookie Bar

Increasing my protein intake is the hardest part of my fitness journey. You can spend all the time you want at the gym but if you're not eating right then its all for nothing.


Whether you get your intake from shakes, snack bars or just upping the portions of meat on your plate there are multiple ways you can increase the protein in your diet.


My go to is a simple clear whey protein shake. Its quick, easy and helps me hit my water intake goals. But then I ran out and the flavour that I like was sold out so I thought, what else could I do?


I couldn't increase the amount of protein content on my plate, I already struggle to finish my plate as is, so I went to the snack bar option.


In a recent poll I conducted, 88% of respondents said that they enjoy protein snack bars and the common themes of favourite flavours involved chocolate.


Now normally I'm not a fan of these snack bars, I tend to find them quite dry or even too sickly but I thought why not try and make my own?


So I went online and found a recipe. I chose the Free Soul mini egg protein bar cookies.


The ingredients involved:

  • 125g Plain Flour

  • 150g Free Soul vanilla protein powder

  • 1 tsp Bicarbonate of Soda

  • 1/2 tsp Salt

  • 1 tbsp Cornflour

  • 115 g Unsalted Butter

  • 55 g Caster Sugar

  • 135 g Light Brown Sugar

  • 1 Medium Egg (I ended up using two)

  • 1 tsp Vanilla extract

  • 150g Milk chocolate (chopped) - I used chocolate chips to save time and effort

  • 100g mini eggs





A lot of people find baking therapeutic, I do not. I find the mixing process a bit stressful and very messy. I find the waiting for whatever to finish baking to be extremely boring, and every time I follow a recipe, it always takes longer than suggested.


Though I will say the end product was worth it.


Initially the first bite wasn't that nice, after waiting 30ish minutes for the cookie to fully bake, I was excited to try it as they smelt amazing. But the first bite was disheartening. After ranting to the group chat about how it couldn't be my baking and it had to be the recipe I went to bed annoyed.


But then, the next day came, I went to the gym and gave a piece to my PT to try. I warned her that it might not taste too good but it also could just be my taste buds, as like I previously mentioned I'm not normally a fan of protein bars.

She then surprised me, letting me know that actually it tasted okay. So after my session I went home, made a cup of tea and grabbed myself a bar.


I was shocked. It was actually good. I don't know why that first bite was so off-putting, maybe it tasted bad because subconsciously I expected it to taste bad?


I can honestly say I ate the whole thing in three days. The soft cookie like centre, the addictive mini eggs on top and the 16g of protein per bar (when cut into 9 equal slices) make for a delicious post workout treat.
